Fruit and veg quality matters

ALTHOUGH more people in the US are eating the recommended five servings per day of fruits and vegetables, research shows that most people, are choosing foods that are low in relate and vitamin C.

This may result In a deficiency in these essential nutrients, according to nutrition researcher Christopher A. Taylor, of Arizona State University in Tempe. "Our status of relate and vitamin C are going down, even though we are eating more fruits and vegetables," said Taylor, who presented his findings at the Experimental Biology 2000 conference. Federal nutrition 'defines have for years stressed the importance of consuming fruits and vegetables, and it is recommended that people, consume at least five servings per day of these foods. But Taylor said that these guidelines contain no actual specific recommendation as to what should be consumed, it's just "eat five."

He and his colleagues examined 1994-1996 data from the US Department of Agriculture's Continuing Survey of Food Intakes by Individuals', and found that the top rive fruits and vegetables consumed by Americans are: Iceberg lettuce, tomato -products, French fries, bananas, orange juice, and onions. Eating these types of foods "can assure you of all the other vitamins", Taylor said. "But folate and vitamin C can end up lacking." Folate is especially important for women of childbearing age, since a deficiency in this nutrient has been linked with an increased risk for certain birth defects.
